Thus also, some men of supreme dignity formerly brought death upon themselves through its excessive consumption. If one considers the nature of the diseases, not one single or simple disease occurs, but as it were whole armies, which are commonly imputed to the liberal use and eating of cheese. It is confessed by many, with reason persuading the same, that it burdens the head; and according to Celsus, book 2, chapter 21, all cheese is a thing alien to the stomach. And as Villanovanus speaks in his commentary on the Salernitan School, chapter 4: Cheese has nourishment
